Very simple in concept, the cherry wine making (ie color "cherry"), which, mind you, in the EU is not legal if obtained by mixing red and white wine (possibly, if anything, white and red grapes). It is realized instead of leaving the solids at low temperatures, in contatto con quelle liquide per un tempo variabile tra le 24 e 48 ore. In tal senso si parla di durata breve, media, o prolungata. Le bucce più indicate per questa breve macerazione sono quelle di colore non intenso, poco tanniche, né troppo acerbe né troppo zuccherine. Svinando, la fermentazione dovrà essere avviata a temperature moderate, onde valorizzare i profumi. Ecco poi il colore rosato dei vini. In rari casi, infine, si vinificano in rosso uve rosate, quali la rossola valtellinese, la premetta valdostana, il canaiolo rosato toscano. Tutti questi vini vanno bevuti giovani. La temperatura di servizio si aggira intorno ai 10-12°.
Altrettanto semplice, concettualmente, la produzione di vino novello, ottenuto con la cosiddetta macerazione carbonica. Un excursus storico ci farebbe arretrare ai tempi in cui la pigiatura si effettuava coi piedi, nei vetturi, e quindi alcuni acini restavano interi. Oggi – in certo senso - l’intuizione e la tecnologia sfruttano quel che accadeva allora, al fine di produrre un vino particolare. Vale a dire che le uve intere vengono riversate su griglie nei serbatoi e giocoforza alcuni acini si spaccano. I serbatoi vengono chiusi lasciando solo una valvola di sfiato, la temperatura è di circa 30°. L’anidride carbonica via via satura l’ambiente, avviando stavolta senza lieviti la fermentazione intracellulare, chimica – non biologica – della polpa a contatto col mosto. Successivamente, dopo 5-20 giorni, il prodotto viene pigiato, diraspato e pressato. Il vino, soggetto ad una malolattica rapida, e leggero quanto a tannini, risulta fresco, fruttatissimo (classici i sentori di frutti di bosco), e va bevuto giovane, già in novembre, in Italia dal giorno 6 – è la festa del déblocage - , per apprezzarlo al meglio. E’ vino da tutto pasto. Si ottiene da oltre 60 vitigni, di cui 7 internazionali. Per la legislazione italiana, inoltre, si può già definire novello un vino ottenuto con un 30% minimo di uve sottoposte a macerazione carbonica. In Francia, viceversa, il Beaujolais (A.O.C., a sud di Macon in Borgogna, da solo vitigno gamay) prevede una percentuale del 100%, donde il colore intenso - quasi violaceo - e l’assai popular perfume, which is then also reflected in the taste!

…premesso che non si dovrebbe parlare di vino biologico/biodinamico, bensì di viticoltura ispirata ai principi dell’agricoltura biologica/biodinamica, i due aggettivi – pur connessi fra loro - celano alcune differenze di non poco conto. Approfondirle consente maggior chiarezza rispetto a quell’espressione, “vini naturali” (talora abusata dal marketing), che dice e non dice. L’agricoltura biodinamica è oggi certificata dall’ente Demeter. Origina a pieno titolo da una filosofia, quella di Rudolf Steiner, che nel 1924 le dedicò otto conferenze “rivoluzionarie”. Al centro di tutto, e dunque anche dell’opera umana nel mondo, Steiner collocava la forza spirituale, tramite cui l’uomo interagisce con la natura. Per non turbare gli equilibri che da sempre governano il creato in senso universale, anche il podere rurale va concepito come una creatura indivisibile dentro la quale convivono molteplici forme di vita (piante, animali, esseri umani, insetti…).
